At last a “coming soon” banner has appeared at the former Javier’s/Asada/Tortilla Republic/Fishbone building at 480 S. Coast Highway. YAY! The Pinafini Restaurant & Bar plans to open in early November, Owner Vasken Haitayan told me.

New Pinafini owner Vasken Haitayan will be opening his Mediterranean-themed restaurant in November.

Pinafini will feature Mediterranean food fare from all the primary regions of Greece. “We’ll be featuring favorite fish of the islands as well as grilled meats and the Grecian traditional take on dishes such as lasagne and stuffed eggplant,” he said. “It will be light, bright and super-fresh.”

Haitayan, a former shareholder in the very successful Cafe Santorini in Old Town Pasadena, chose to put roots down in Laguna by purchasing the restaurant building this summer from longtime owners, the Fongs. “Clearly, we’re doing a lot of renovation now, but we’re aiming for a November opening date,” said Haitayan.
