I asked local chefs for EASY recipes they whip up themselves when they head out to Superbowl parties. Over the next few days, I’ll be posting their go-to favorites that become everyone else’s favorites at any party they attend.
From Cary Redfearn, Lumberyard and Slice Pizza …
Mushroom Crostini
1 load ciabatta or 1 baguette
1 lb mixed mushrooms
8 oz. Manchego cheese
olive oil
salt, pepper, thyme
optional: pesto (homemade, of course!)
Preheat oven to 425°
Cut the bread diagonally 1/4″thick slices. Sprinkle with olive oil, salt, pepper.
Chop mushrooms and toss in a bowl with olive oil to coat, and season with salt, pepper and thyme.
Roast mushrooms on sheet pan 10 minutes. Remove from oven.
Toast bread on sheet pan till crisp, turning to toast both sides.
Thinly slice the Manchego. (If you have pesto, you can also coat the bread slices here with pesto)
Top the bread slices with Manchego and mushroom mix and return to oven until cheese softens. Serve hot.
